Waubs Harbour Distillery

Rob, Tim and Bec Polmear converted an old oyster hatchery in Bicheno into a distillery where five bond rooms are cooled directly by the ocean. The maritime conditions shape three flagship single malts — Waubs Original, Port Storm, and Founder's Reserve — released in batches of under 750 bottles. Waubs Original took the 2025 World Whiskies Award for Small Batch Single Malt.
