Tower Whiskey Distillery

The Hunter Valley's first whiskey distillery occupies a Spanish revival building with serious wine country pedigree — the site was originally developed by wine legend Len Evans. Since 2021, the Hope family has been double-distilling single malt in copper stills, ageing in ex-wine and spirit casks, then finishing in selected new oak.
