The Aisling Distillery

Mark, an engineer by trade, founded this Griffith distillery in 2014 after a trip to meet Bill Lark in Tasmania settled the question. The focus is single malt whisky — slow spirit runs, locally sourced barley, hand-filled casks — alongside rum and gin. His wife Michelle runs the cellar door. The Scottish heritage backstory is genuine and, unusually, earns its place on a bottle.
