Mt Uncle Distillery

Founded in 2001, Mark Watkins's Walkamin distillery runs on volcanic soil, spring water and a 1500L Arnold Holstein copper pot still. North Queensland sugarcane becomes FNQ Rum Co. spirit; estate-grown Blue Weber agave — Watkins introduced the variety to Australia — becomes Agave Australis. The distillery door runs daily from noon. Awards include World's Best Sugarcane Spirit at the 2024 World Rum Awards.
