Thirty-five years in the trade — starting with a champagne house in Europe — brought Michael Unwin to this ten-minute drive west of Ballarat. The Windermere vineyard runs entirely off solar, with cellar door and winery floors left as compacted earth to cut the carbon load. Wines span sixteen-plus varieties, poured on site where everything from growing to bottling happens under one roof.
