Dunalley Bay Distillery

Sandra Chu and Mark Wray's 20-acre beachfront property sits at the gateway to the Tasman Peninsula, 45 minutes east of Hobart. Their gin roster includes an Olive Leaf expression — five years in development, made with olive leaf tea and olive oil — served alongside local cheese and seafood in rustic huts above the bay.
