Canberra Distillery

Former Treasury economist Tim Reardon runs this Mitchell distillery with a precise instinct: only the "hearts" cut from each distillate makes it into a bottle. The range spans seasonal gins — try the Winter Gin with Fever Tree Clementine tonic — through to a Bourbon Cask Whisky. His current pour of choice: an Espresso Old Fashioned, bourbon and espresso-forward, with cacao and orange bitters. A team member walks visitors through the range and, if the still is running that day, the day's distillate. Tours and tastings by booking. Private whisky cask programme available.
